Frozen Piña

Margarita

Serves 3-4

I love a classic Piña Colada or Margarita as much as the next gal, but combining the two is something special. This easy-to-throw-together, super refreshing marg is perfect for a group on a hot summer day. It gets its creamy, smooth texture from frozen pineapple and unsweetened coconut cream. With good silver tequila, orange liquor, and freshly squeezed lime juice, it’s a crowd-pleasing, not-too-sweet cocktail everyone can enjoy.

WHAT YOU’LL NEED

INGREDIENTS

  • 6 oz silver tequila, like Altos

  • 3 oz lime juice, freshly squeezed (about 2.5 limes)

  • 3 oz unsweetened coconut cream

  • 3 oz orange liquor, like Cointreau

  • 2 cups frozen pineapple

  • 1 cup ice

DIRECTIONS

  1. Place all ingredients in a high speed blender and blend, gradually increasing the speed until the mixture is smooth and creamy, about 1-2 minutes.

  2. Pour into glasses and if desired, garnish with a pineapple leaf or wedge of fresh pineapple.

RECIPE NOTES & TIPS

  • It’s important to use unsweetened coconut cream here, not coconut milk or cream of coconut. Coconut milk isn’t as thick or rich, and cream of coconut (traditionally used in Piña Coladas) has added sugar. But if you prefer sweeter margaritas, feel free to substitute cream of coconut!

  • Having a good, high speed blender ensures the mixture is totally smooth. Certain blenders can’t fully break up ice, which gives you a more slushy-like texture. Though still delicious, if you make blended beverages, dips, or purees often, I recommend investing in a Vitamix. To me, it’s performance compared to other blenders justifies the higher price point. We’ve had one for several years and it’s one of our most beloved kitchen appliances.
